Key lime pie

Lately, I'm so lazy that I prefer writing in Polish on my second blog to translating recipes for "sweet baking time" but this one is so easy that even my brain on mode "holiday" can do it! This is a really refreshing dessert, only 5 ingredients and no baking! Enjoy!

Ingredients:
1 can sweetened condensated milk
200 g white chocolate
80g butter
200 g biscuits
2 limes

Grind the biscuits in order to get biscuit crumbs. Melt the butter and stir in the crumbs. You should get the texture of wet sand. Press the crumbs into an even layer in the pan. Put the pan to the fridge for 30 minutes.

Grate the zests of two limes and then squeeze the juice.

Melt the chocolate in a pan with the condensated milk.

Add the lime juice and lime zest and stir.

Spread the fudge on the top of the biscuit crust. Refrigarate the fudge for about 2-3 hours.

Bon appétit!

No-bake cheescake

Hi, I'm in Danemark now and I've already forgotten what "hot" means but last week in Bordeaux the temperature in our appartement was so high that I really didn't want to turn on the oven. I mixed some recipes I've found on the web and the result is really delicious (but with a few changes it could be even better! :)).

Ingredients:
200 g cornflakes
120 g melted butter (I used like 80g and it was definetely not enough!)
200 g white chocolate
250 g mascarpone
300 g philadelphia-like cheese (I used a French cheese "St Moret")
50 g sugar
5 g agar-agar
vanilla extract

Make cornflake crumbs and mix it with the melted butter.

Scatter the crumbs in the bottom of your pan, and press them into an even layer. Put to the fridge for about 30 minutes.

Melt white chocolate with three spoons of milk.

In a bowl, mix mascarpone, philadelphia cheese and melted chocolate.

Add sugar and vanilla extract. Mix.

Prepare agar-agar in a minimal amount of hot water. Add to the batter and stir quickly.

Spread into pan. Freeze for a few hours.

Have a nice day!

Peach clafoutis

I've finally finished my exams and now I have time to make cakes! I made this recipe two weeks ago when I desperatly needed something sweet. I thought about a crumble but then my eyes laid on this:

And I had all the ingredients in my fridge! It couldn't be a coincidence!
Feel free to use whatever fruits you want.

Ingredients:
4 eggs
150 g sugar
1 package vanilla sugar
250 ml milk
200 ml sour cream
75 g potato starch
400 g peaches
salt

Preheat the oven to 210°C.

Peel and cut the peaches.

Mix starch, sugar, vanilla sugar (I added a vanilla extract instead of vanilla sugar) and a pinch of salt.

Add eggs and stir.

Add sour cream and milk and stir.

Grease the mold and put the cut peaches in it.

Pour the batter into the mold. Bake for 35-40 minutes till slightly brownish.

Ta-da!

Enjoy!

Almost banofee pie

I wanted to make an amazing banofee pie for an amazing occasion but, for the first time, I over-whipped the cream... So it's an 'almost banofee pie' (-whipped cream, +peanuts). Nevertheless, we managed to eat it over 24 hours so I can say that whipped cream is not so important :)

Ingredients:
1 can sweetened condensed milk
150 g biscuits
100 g butter
3 bananas
100 g peanuts
lemon juice
cocoa powder for decoration

Place the can of sweetened condensed milk in a pot and put enough water to cover the whole can. Put on medium high heat and let boil for two hours. The can has to be totally immersed in water, otherwise it can explode. Let it cool down.

Melt the butter in a small pan (after my trip to Barcelona, I still had some almond butter left, so I used it instead of "normal" butter).

Crush the biscuits into powder and mix with melted and cooled down butter.

Spread the crumbles out in a mold (mine was like 20cm x 20cm) and press down. Put to the fridge for 30 minutes.

Spread the toffee on the crust. (OMG, it is so mouth-watering picture!).

Spread some peanuts...

... and cut bananas. Sprinkle with lemon juice.

You can add the whipped cream.

Here is a tip: this is how whipped cream should NOT look like! :)

Decorate with cocoa powder to counterbalance the sweetness.

Bon appétit!

amazing chocolate cake with strawberries

I love baking and eating chocolate cakes. Baking - because the best chocolate cakes recipes are the easiest ones. Eating because... because it's chocolate, I guess! :)
Modeling the marzipan flowers was a lot of fun, I felt like being back in the kindergarten (my artistic skills have not improved since then but I hope you like the decoration nevertheless).

The recipe was found in "Chocolat & Chocolats" but I changed it a little bit (I couldn't be myself if I did not change something!)

Ingredients:

 400 g dark chocolate
 200 g butter
 4 eggs
 80 g flour
 200 g sugar
 300 g strawberries
 20 cl whipping cream

Melt butter and 200 g chocolate on low heat (or in the microwave, I don't have one :)). Stir until smooth and let it cool down.

In the meantime, cut the strawberries.
 Preheat the oven to 180oC.

Add sugar and stir.

Add eggs and stir.

Add flour and guess what...? Yes, stir! :)

Spread half of the batter in baking mold. Put the cut strawberries on top.

Spread the second half of the batter.

Bake for about 35 minutes.

For the icing:

In a small saucepan heat cream. Remove from heat right before it starts to boil and pour over chocolate.

Let stand for a few minutes and then stir until smooth. Put to the fridge for a few hours.

Spread the icing on the cooled down cake.

Decorate with marzipan flowers.

Bon appétit!
