Mayo cake


 I was going on holiday and I decided to clean up my almost empty fridge. I had a few eggs and a jar of mayonnaise… What a pity to throw them away if you can make a tasty and a very simple cake! :) The best part was asking my friends: there is a special ingredient in this cake, do you recognize it?
  Honestly, I knew that there was some mayonnaise in this pastry and it didn’t stop me from taking another slice. Stay open-minded and enjoy!


Ingredients:
 4 eggs
a cup of flour
a cup of sugar
a cup of mayonnaise
1 tsp baking powder

for the icing:
dark cocoa powder 
icing sugar
water

Preheat your oven to 180oC.

Separate the egg-yolks and the egg-whites.



Beat the yolks and sugar in a bowl until very light in color (which is maybe not the case on my picture, but it was still fine!)


Add mayonnaise and stir until combined.


In another bowl beat egg-whites till stiff peaks (do not over-beat them!)



 Mix flour with baking powder. Incorporate gently mayonnaise-yolk mixture to beaten egg-whites until combined.


Add flour mixed with baking powder. Once more, stir gently.



Grease and flour your baking mold. Put the batter into the mold and bake for about 45 to 50 minutes until a toothpick inserted in the middle comes out clean.

Allow the cake to cool down.

 In the meantime, you can prepare the icing.



At the beginning, I started with one big spoon of cocoa, 4 spoons of icing sugar and a spoon of water then I added some sugar till my icing was more viscous. You have to feel it yourself. If it’s too compact, add a few drops of water, if it’s too liquid, add sugar. Frost the cooled cake with the icing and decorate.


 Normally, your cake should grow a little out of the mold. I had to cut the top of my cake because my oven had a bad day and the top was burnt. That’s why it is so flat (but it was still good!)

Triple choc cookies



I’m not sure if they should be called cookies with chocolate chips or chocolate chips with cookie dough. They don’t look extraordinarily but they are A-M-A-Z-I-N-G, they taste like mini-brownies. It’s hard to eat only one so if you don’t want to eat them all, share with friends! (I surely did!)

the recipe adapted from my favourite Polish blog about baking!

Ingredients:

100g white chocolate

150g dark chocolate

100g milk chocolate
125g butter
120g sugar
1 egg
40 g dark cocoa
170g flour
½ sp baking soda
½ sp baking powder


Chop chocolate into small chunks.



Melt the butter, let it cool down, add an egg and mix.


Preheat your oven to 180oC. Mix baking powder and soda with flour and sugar, add the cocoa.


Combine with the melted butter-egg-sugar mix.


The dough will be rather compact. Incorporate chopped chocolate. It won’t be easy; you can do it with your hand. Be sure that every single piece of chocolate is in the dough.


Take a bit of the dough and make a little ball. Try not to put the balls too close to each other, otherwise you will get a huge cookie! J


  Bake the cookies for about 10-15 minutes. If you can, let them cool down a bit before putting on a plate. I had to take them carefully with a spatula because I have only one baking sheet and I didn’t want to wait before doing another portion of the cookies.

Carrot cupcakes with white chocolate frosting



Maybe I should have been born as a rabbit because I really love eating carrots! They are vegetables but taste very good in all kinds of sweet dishes (juices, fruit salads, cakes). When I feel guilty that I haven’t eaten my daily portion of vitamins (in France, a health campaign “eat at least five fruits/veggies per day” attacks you everywhere), I peel a carrot and I eat it like an apple.
  These cupcakes are maybe not so healthy but they are delicious! I like when the muffins are wet so I didn’t add a lot of flour. If you eat them all, you can say that you got your 2 portions of veggies! ;)

Ingredients:
150 g carrots (3 small carrots)
3 eggs
150 g yoghurt
½ cup sunflower oil
1 cup flour
½ cup sugar
1 tsp baking soda
1 tsp baking powder
2 tsp “quatre épices” mix (cinnamon, ginger, nutmeg, clove)



Frosting:
100 g white chocolate
20 g butter
200 g mascarpone


Preheat the oven to 180oC.

Grate the carrots.



Add eggs...


...then yoghurt and oil.


Mix!


Put flour, sugar, spices, baking powder and soda in another bowl. Mix.


Add carrot-eggs-others mix. Stir until combined but not for too long.


Fill the muffin cups till 2/3 of the cup.


Bake for about 25 minutes (you can check with a toothpick, if it comes out clean, the muffins are ready!).

In the meantime, you can prepare the frosting

Melt 100 g of white chocolate (or less, I ate 2 small squares, I couldn’t help it
J) with butter. Let it cool a little bit, then add mascarpone and stir until you get a homogenous mix.


Put it in the fridge (or the freezer, I’m so inpatient!). 

Let the muffins cool down before decorating.

You can just spread the frosting with a spoon and sprinkle some grated carrots…


…or you can use a decorator bag.
